Palacios Remondo La Montesa, Rioja, Spain
PRODUCTION: Palacios is deeply committed to organic viticulture and natural winemaking practices, such as the use of organic fertilizers in the stone-covered, clay soils. All wines are unfiltered and clarified only with egg whites, no exogenous yeasts or commercial compounds are added to the wines and sulfites are kept to minimum levels. Total respect for the vineyard and its surrounding environment results in wines that express the true nature of the estate’s soils.
WINE PROFILE: 65% Garnacha, 30% Tempranillo and 5% Mazuelo
WINEMAKER’S NOTES: As described by renowned winemaker Alvaro Palacios this ruby red wine with an amaranthine halo contains complex aromas of syrup-covered cherries, fresh nectarines, quince paste and delicate notes of wood, white pepper and flint. On the palate, the wine is unctuous and voluminous with soft tannins that are presented over a foundation of mixed berries, hints of white pepper, blood oranges and dark chocolate.
PAIRS WITH: This wine is very versatile and pairs well with almost any type of cuisine. It is particularly ideal with all types of roasted or grilled red meats, ripe cheeses and pastas.
Mâcon-Chaintré Château de Chaintré, Burgundy, France
PRODUCTION: Alcoholic fermentation takes place slowly at 18°C using the grape’s naturally occurring yeasts. This method ensures the preservation of all the natural aromas, best expressing the beauty of these lands. Malolactic fermentation, systematically researched, naturally follows this stage. Lees aging is done slowly, for 6 to 8 months. Next is filtration, blending and finally bottling, which is all done in house.
WINE PROFILE: 100% Chardonnay
WINEMAKER’S NOTES: Golden-green robe; a fruity wine with a citrus, grapefruit bouquet. Pleasing structure in the mouth, edging towards freshness, excitability, breadth and excellent lingering citrus notes.
PAIRS WITH: Ideal as an aperitif, this wine works beautifully with appetizers, fish or vegetable terrines, pizza, paella or cold meats.
